Healthy Eating on the Road

It requires a little thought but you can eat healthy on the road. Driving from Florida to Virginia yesterday, here's how I managed it.

First, I brought some fruit and my Barley Max in the car. That got me by for a little while.

My husband did  most of the driving so when he suggested Denny's for breakfast, I didn't have the heart to say no. I ordered a fruit cup which was grapes, strawsberries and cantelope. Then I ordered the veggie omelet, hold the eggs. I got a small bowl of sauteed veggies. I had a cup of herbal tea and that was breakfast.

I snacked in the car on some dried unsulphured apricots and dried figs.

For lunch we went to Subway and I ordered the veggie delite, hold the cheese, on the multi-grain wheat bread. I asked for extra spinach and got it, on a foot long, for $5.

For dinner we went to Taco Bell. I ordered 2 crispy tacos with beans, rice, tomato, onion, and guacamole and they were delicious.

So I did it!

It can be done.

Asian Dinner

Tonight I am making a cup of organic Basmati rice. I use olive oil instead of butter to prevent sticking.

Then I will saute some minced garlic, some chopped baby bok choy, some green onions, some left over white onion, several shitake mushrooms, sliced, a little sliced fresh ginger and some fresh bean sprouts. I might add some chopped eggplant.

I saute and then add a dot of water, cover and steam for less than 10 minutes and add Nama Shoyu, organic soy sauce that is also a probiotic.

Serve the the veggies over the rice and you will love the homemade Asian dish.

Did I mention that it was healthy and filling?

Sweet Potato Dinner

What's for Dinner? Tonight was super easy.

First, I baked 2 large sweet potatoes, one to share for dinner and the second for my husband to slice, saute in olive oil and eat tomorrow. He loves it that way.

Tonight, after baking at 425 degrees for an hour, I cut the potato in half and "dressed" each half this way. I dusted each with cinnamon, grated a raw apple over each and then drizzled maple syrup on each.

This is delicious.

For a second course, I took some leftover pinto beans, added minced garlic, a diced organic tomato and ate that. My husband had BBQ beans also with the garlic and tomato.

As I type this, I am full and happy. Try it.

Friends?

Talking with a young waitress yesterday got me thinking about who determines what we eat.

This woman was eating food that she knew wasn't good for her because "going out to eat with friends, it was easier."

She used to be a vegan, then a vegetarian, then she added fish and each "add" to her diet was something she knew, in her heart of hearts, wasn't good for her.

What voices in your head or what people at your table determine what you eat?

My mother used to say, "Eat your bread." And it was delicious bread, Challah, a Jewish twisted egg bread that she would buy on Fridays for the Sabbath. She increased her order from the Hilltop Bakery in North Bergen,  NJ from 2 to 3 loaves because on the way home from the store, I would eat about half a loaf.

Who knew at that time that the flour and gluten in the flour would make my stomach blow up and look 6 months pregnant, every week? Not us! I ate the bread because it tasted good any my mom liked me to eat bread. Maybe she liked me to eat bread because she ate bread.

Although still delicious, I don't eat that bread anymore, not only because of the bloat but because I don't want to waste calories on something that is bankrupt nutritionally. What about you?

No meal is worth me having to "diet" for a week. That means if I am with friends or family, and they eat a steak that smells wonderful, or eat cheese cake that I know is delicious, or drink alcohol that I know hurts them, I will sit quietly and remind myself why I don't eat or drink those things. It takes too long to recover and
the yo-yo cycle of eating those things and then detoxing is a lot of trouble and not worth it.

Where will those people be if I am in the hospital suffering from a heart attack, a stroke, cancer, liver disease or other possible side effect of wrong eating? Where will they be? Even if they are at my bedside, they will not be in my body with me hurting, wasting away, struggling to recover. Only I will be there.

I don't want to be there. So self-control, awareness, vigilance and careful choosing will  keep me away.

Sometimes my husband used to come home from the grocery store with a few boxes of some sweet dessert and assert proudly, "They were on sale!" I always responded in the same way, "If cyanide were on sale, would you buy it?"

No, and h--- no!

Friends don't give friends cyanide. You give it to yourself. You have choices. Choose this day who you will please, the perception of what you think friends want, or what you know you should eat!

It's worth it.

Caffeine Again

A  recent study on caffeine has been in many newspapers, about how caffeine cuts prostate risk. Conducted by researchers from the Harvard School of Public Health it declares that heavy coffee drinkers were less likely to be diagnosed with a lethal prostate tumor.

I don't know who funded that study, but I wouldn't be surprised if pharmaceutical and the coffee lobby were be hind it.

DR. JOHN MCDOUGALL SPEAKS ON THE SUBJECT OF CAFFEINE
Following are a few quotes taken from Dr. John McDougall’s book The McDougall Plan.
“Some of the most popular DRUGS consumed by people of affluent western nations are found in coffee beans, tea leaves, and cocoa beans (chocolate)… all of which contain a group of natural substances known as methylxanthines. These chemicals include caffeine, theophylline, and theobromine. Many prescription and nonprescription drugs also contain methylxanthines.
“One of the most important of the methylxanthines is the popular DRUG ‘caffeine’… undesirable effects from the stimulating properties of caffeine include: elevated heart rate, irregular heartbeat, increased blood pressure, frequent urination, increased gastric acid secretion (which contributes to indigestion, gastritis, and ulcers), nervousness, irritability, insomnia, loss of appetite, nausea, and diarrhea. In the November 2005 issue of Newsmax magazine Dr. Blaylock reports:
“Caffeine is considered to be the most widely used psychoactive substance in the world. In some ways it is acting like MDMA (Ecstasy) and cocaine. That is, it stimulates brain cells intensively… If you stop consuming caffeine you will notice two things right away: that you cannot stay awake and that you have a splitting headache… This is because the brain has turned down the sensitivity to caffeine so much that your brain is struggling to remain conscious. The headache is because of rebound dilation of the blood vessels in the scalp… Excessive caffeine has several dangers. With high consumption, one can have a sudden seizure or even abnormal heartbeats. On some occasions the abnormal heartbeats – called arrhythmias – can lead to sudden death, especially if your magnesium is low.”
MORE ADVERSE EFFECTS RESEARCH HAS REVEALED
Caffeine stresses the nervous system; increases uric acid production and can lead to kidney damage. Researchers at Boston University Medical Center consider coffee intake to be associated with heart attacks and cancer, and when used with sugar becomes even more harmful.
“Coffee nerves” or “coffee jitters” can occur after 150 mg (1 cup) are ingested, while physiological and psychological dependence can occur at 300 mg/day (2 cups).
62% of American coffee drinkers in a recent survey claimed they “could not function” without their daily coffee (caffeine) intake.
Caffeine intoxication is a form of severe poisoning that occurs at the cellular level when as little as 250 mg of caffeine is consumed in a day. This toxic stimulant may result in heart palpitations, stomach irritation, dizziness, muscle tension and trembling, insomnia, shortness of breath, diarrhea, ringing in ears, lightheadedness, and headaches.
Children are far more susceptible to caffeine intoxication due to lighter body weight and comparative purity of physiology. Parents who wouldn’t dream of giving their children coffee are giving them the equivalent dose of caffeine every time they let them indulge in caffeinated soft drinks, cocoa, iced tea, and chocolate. The irony is that most of the caffeine taken from coffee in the decaffeinization process is bought by the soft-drink industry and added to soft drinks!
Caffeine first triggers an adrenalin release and then mimics the “fight-or-flight” response by stimulating the cardio-respiratory and central nervous systems. Every cell, organ, and system is affected by caffeine.
Caffeine speeds up Basal Metabolic Rate by 10 – 25%. It increases blood pressure, causes irregular heart rate, and restricts brain blood flow. It is implicated in cardiovascular disease. Six cups of coffee daily, doubles heart attack risk.
Caffeine stimulates overproduction of gastric pepsin/hydrochloric acid, contributing to the formation of stomach ulcers.
Besides all of these physical symptoms of auto-poisoning, caffeine can stimulate mental disorders with symptoms identical to “anxiety neurosis”: nervousness, irritability, self-consciousness, moodiness, and/or depression. Indeed, some people who suffer from mental disorders are undoubtedly “adding fuel to the fire” when they become caught in a vicious circle of caffeine use.

Pack Your Lunch

I've been working all week away from my home and so I decided to pack my lunch instead of coming home at noon. I only live 3 miles each way, but the rush of driving and eating and watching the clock made me think it would be worth the effort to pack my lunch.

Here's what I pack:
  • First, there is the main course, a big salad in a plastic container with chopped lettuce, onion, tomato, avocado, grated cucumber, grated raw beet, chopped celery and walnuts. Then I mix a dressing to go over with Udo's oil, apple cider vinegar, dijon mustard and some water. It is delicious.
  • I always pack a baggie of peppermint leaves, picked in the early morning from my garden. Then for a few cups of tea, I pour hot water over the leaves with a packet of Stevia.
  • For snacks, and I love to snack throughout the day, I put the following in baggies: dried apple slices, dried unsulphured apricots, a chunk of carob spirolina
  • I also bring one Living Food bar from www.hacres.com  - I like the orange cranberry one. If it's a little hard, I dip it in the tea
  • Today I packed a raw orange pepper which I eat like an apple. Cute:)
It takes about 10-12 minutes to make this and pack it and it's worth it. I have a sense of security at work that I don't have to wonder what I'll eat.

Eat Like A King

So How did I eat like a king this weekend?

I made one new recipe and repeated a few favorites. I take this transition to a new way of eating slowly. I want to master each new step before I take on another one.

The new recipe was Cinnamon buns. The recipe was developed by Jackie Graf and is you can ever take a cooking class with her, it's worth every penny. Check out: http://www.sproutrawfood.org/

I took a day long class with her two months ago and I am already trying to figure out when I can take another. She is extremely smart, gifted, creative, and she and her husband work well together as a team.

First, I made homemade milk using Brazil nuts as a base. You soak approximately 2 1/2 coups of Brazil nuts in filtered water for about 4 hours. Drain, then put in a blender that can grind grain or other grinding device.Pour the mixture into a nut bag. (I bought one at a special cooking class.) The  squeeze the liquid out into a bowl or pitcher and, voila, you have nut milk.

I used the nut milk in my morning smoothie and teccino. I used the nut pulp to make some really divine "cinnamon rolls." Ok, they don't resemble Cinnabon in calories or unhealthiness. These are delicious and have only healthy ingredients. I made enough to keep in a plastic container in the fridge for a week. We take a few out at a time, reheat in the dehydrator, and enjoy with a cup of teeccino or a cup of tea made with fresh peppermint and stevia leaves from out tiny herb garden.

If you want to start a library of really useful cookbooks, buy one of Jackie's. Just work on doing one a week and in a few months you will have mastered a lot.

How Much Food is a Meal?

We eat a lot of food in the US. I know I used to, especially when I was pregnant and for about 10 years following that. I was eating a lot when I was pregnant because I was always starving. I ate a lot after each birth because I had developed the habit of eating a lot.

Now the basic slogan I follow is: "Eat like a pauper during the week and like a king on the weekends."

Why? Because more than that is too many calories and too much food!

So, it's the weekend and what have I eaten today? For breakfast first I had some Barley Max in some water and then I worked out at the gym. When I came home, I ate some fresh organic fruit: an orange and a pear.
I just wasn't hungry for more than that.

I did some errands and for lunch I had a "blended salad", sort of a raw soup I make in the blender with lots of veggies and my dressing of choice: Udo's oil, Dijon mustard, and water. I enjoyed it with some of  Mary's Gone crackers. I like them as much for the name as for the taste.

We just had "tea" with no tea but hazelnut teccino, a coffee substitute with cinnamon, stevia, and almond milk and a toasted piece of sesame Ezekiel bread smeared with organic raw honey and sugarless raspberry spread.

Later we plan on having zucchini noodles and some kind of sauce, but I'm so full now that I can't imagine being really hungry later.

I am not hungry because I am eating foods that nourish my body. So I don't crave more.

That's the secret. When you are hungry all day long, that's a big clue you eating the wrong foods, foods that satisfy your mind, not your body.

Think about it.

Maple Walnut Frozen Ice Dream

What's for dessert? Maple Walnut Frozen Ice Dream!

If you think eating healthy means no desserts, you think wrong. Rev. George Maklmus dreamed this one up and it's so easy, you'll be eating it in 10 minutes from reading this blog, that is if.... you have frozen bananas in the fridge. If not, get some bananas, peel them, and freeze them in zip lock bags and you will be ready tomorrow for this treat.

My husband loves ice cream but rarely eats it anymore because dairy is not good for you: hormones, fat, lactose sensitivities, lowered immune system, and more. So when I saw this recipe today at www.hacres.com I flipped.

We made it and had some and I'm still licking my lips, it was so good. In the picture you see a sprig of mint decorating it. That's easy if you grow mint, outside in a pot, in the ground, on the deck, anywhere.


Maple Walnut Frozen Ice Dream

Maple Walnut Frozen Ice Dream

Children of all ages, from just a few years old to 100 plus, will enjoy this nutritious, sweet, and basically raw (except for the maple syrup) treat, especially on a hot late spring or summer day.

Ingredients

  • Ripe bananas (peel should be speckled)
  • Pure maple syrup (to taste)
  • Walnuts (or pecans) coarsely chopped

Directions

  1. Peel several bananas and cut them into quarters.
  2. Place banana pieces on a cookie sheet and freeze (once frozen, place bananas in a zipper bag and store in freezer for future use).
  3. Place 6-8 frozen banana pieces in a food processor with an "S" blade.
  4. Drizzle maple syrup over the bananas and run the food processor until the mixture is creamy.
  5. Place mixture in a serving bowl, drizzle more maple syrup on top, and sprinkle with chopped walnuts or pecans.
  6. Kick back in the sunshine and enjoy your "ice dream!"

Soda and Caffeine?

A young woman I am advising, 20's and with 2 young boys, is addicted to Dr. Pepper, by her own admission. Here is how I counseled her.

First, I warned her that she wasn't going to lie what I said.

Then we both went to my computer and keyed in: www.hacres.com
In the search box at the top we entered "caffeine."

She was patient as I read her the dangers that were listed in the first article that appeared. There are many articles to read and we just stayed with the first one. It was frightening enough.

Then I asked for her feedback and I was so happy that I had gotten her attention and she knew she needed to wean herself off her addiction. Her boys need a live, healthy, and happy mom.

So we devised a plan.

For two weeks she is going to replace a little of the Dr. Pepper with water. She said she would do that little by little to minimize the withdrawal symptoms since cold turkey off of caffeine can cause headaches, the jitters, and other symptoms.

Of course the poison of caffeine can cause worse.

By the end of two weeks she will report to me what she has done and how she feels.

The second thing that she agreed to was to eat a raw apple in the morning, once a day for nutrition, and to help her stay alert and awake. Apples seem to have that effect and that's why they are sold in baskets at truck stops. Some people feel that an apple keeps them more alert than coffee.

What addiction do you need to conquer? Be honest, research the negative effects of it and then make a plan. Let me know how it goes.

Hair Loss

I was losing my hair. I used to have mounds of thick, wiry, wavy hair and every morning, I would gently arrange my hair and many hairs would fall out.

I started taking 5000 mg of biotin every day. Sure it makes hair regrow, also your finger and toenails, and facial hair. I'm a woman! Not good.

But I kept asking questions and Olin Idol at Hallelujah acres responded to my question about the relationship to iodine deficiency, low thyroid and hair loss. He said that his research shows that maybe, as much as 70% of the population has thyroid problems and the standard medical tests can miss the problem for as long as 20 years. He also said that no harm would be done by my taking the supplement. (He's a very knowledgeable researcher.)

Because I don't use iodized salt in my diet, (the chemicals that process it are harmful), I get my iodine from other sources: kelp and other sea vegetables, mostly freeze dried that I shake onto salads for flavor. When I remember to do it.

I've started taking one drop of Iosol, an iodine supplement, in about 2 ounces of water daily. The bottle will last for 2 1/2 years at this rate! And I've noticed a difference. Less hair is falling out and there is lots of regrowth where I want it, on the top of my head. No more places where the scalp shines through.

I'm being honest here to help someone else. No pride about it. I am most motivated when I can help someone else. That's what makes me tick.

Small Steps

Yesterday I had 2 friends over for lunch because they wanted to know more about how and why I eat the way I do. I reminded myself to go slowly. It seems overwhelming when anyone is trying to reevaluate something that has been such an unconscious and yet important part of their lives, like eating!

Here's what we had:
  • lots of organic field greens
  • organic raw asparagus, about 4 inches of each spear
  • tomato chunks
  • avocado slices
  • toasted sesame Ezekiel bread with raw almond butter
At their request, I made a salad dressing with Udo's oil, aged Balsalmic vinegar, and some fresh Greek oregano from my garden.

I also made broccoli slaw using the pre-made slivers of broccoli stalks and carrots from the grocery store. To it, we added some diced onion and Vegenaise with the yellow label. That's the kind made with olive oil.

I served water with lunch and after lunch I brewed Hazelnut Teeccino and they loved it, instead of coffee. They had 2 cups each! We sweetened it with Stevia and added some almond milk to lighten the dark color.

Then for dessert we munched on carob spirolina, some dried unsulphured apricots and a vegan chocolate chip walnut cookie.

I also used my spiral noodle maker to demonstrate making noddles from squash, zucchini, sweet potato and other vegetables and gave then a little baggie of what I sliced to take home for dinner. 

Not a perfect vegan meal, maybe too many calories, but delicious and a good introduction to how to eat quickly from your refrigerator and pantry on healthy foods.

Afterwards, I showed then a 10 minute DVD "Pastor to Pastor" with compelling testimonies from pastors who finally  understand that prayer plus dietary changes are what heals disease.

Smell Better!

A few welcome side effects of the vegan diet I follow are that my husband and I don't smell so bad.

When you stop laughing, listen up. We never got a notice from the Board of Health. But when I wake up in the morning, my mouth doesn't taste foul anymore. When my husband works outside and comes in sweaty, he doesn't smell like a horse anymore.

Removing the animal protein from your diet is the reason we smell better. No joke. Can you imagine what caused the odors in the first place?

It's big business in the US to cover up smells: perfume, deodorant, house deodorizers, scented soaps, detergents, scrubs and so much more. Remove the cause of these odors that come out of our bodies and perhaps Proctor and Gamble and the other companies can make products that would be more useful.

Has it ever occurred to you why the odor masking business has gotten so huge? I'm sure it's mostly because we and our pets eat animal food that putrifies in our bodies and makes us smell bad. If the odor is there, can you imagine what else these substances are doing to our insides?

Organic Berries

For those of you that think organic always has to be more expensive, here's a tip.

Now is the time that berries are in season. Buy them by the flat, the box and the carton, many times. Freeze them and then you can have them all year.

I use berries in my morning smoothie and frozen ones taste better and make a better consistency.

Stop poisoning yourself and your family. Buy organic berries when you can.

I"m hoping my husband will read this post. He loves to buy berries in Wal-Mart. Sometimes they have organic. Target has organic more often.

Dinner for Two

Okay, you asked for it. Quick and great dinner for 2 in less than 20 minutes.

I own a noodle maker, not the kind that makes dough pasta, but the kind that turns vegetables into noodles. It's a spiroli and you can get it on Amazon sometimes for less than $30.00.

I took 2 organic zucchini, fresh from the organic coop we belong to. Put the zucchini on the prongs on one end and insert the other into the round sharp shape on the other. Turn the crank and in a minute you have long, fabulous noodles, all vegetable, no cooking involved.

My  husband wanted Alfredo sauce, so I mixed one cup of Veganaise and 1/2 cup of nutritional yeast flakes with 1/4 cup of water. Heat almost to bubbling and remove from the heat.

I wanted tomato sauce, so I heated some tomato paste, added water, chopped onion, garlic and celery with a shake of dried basil and heated for about 2 minutes.

I toasted 2 pieces of Ezekiel bread, one apiece. He put apple butter on his (with pasta??) and I put some of his Alfredo sauce on mine.

We thought we were so cool, eating this meal at home. It looked so good and was delicious.

Fast Food from Refrigerator

I love discovering new recipes that fill me up, are delicious and easy.

Here's what I had for lunch. I took a collard green leaf, had some in the fridge from the food coop delivery last week.

I trimmed the spine in the back for easier folding. Thank you Violeta, for that trick.

Then I filled it with grated raw beet, some mashed black beans, some celery, some of Bubbies sauerkraut (it's a probiotic food, like yogurt without the dairy), some Dijon mustard, rolled it up and chowed down. It's sort of a vegan hot dog. (I could have put the ingredients into a food processor to mash everything and then shape it into a hot dog, but I didn't want to bother.)

I followed it up with mint tea. I just boil water in my electric teapot, no microwave for me. Then I pick some mint tea leaves from those growing outside my house (please don't tell the gated community grounds police) and put them in a china teapot with a packet of Stevia. Steep for a few minutes and drink to the last drop. It's delicious and is good for digestion.

I had some leftover vegan cookies from Loves Health Food store in Ormond Beach.

And that was my healthy, fast food lunch.
