Sweet Potato Dinner

What's for Dinner? Tonight was super easy.

First, I baked 2 large sweet potatoes, one to share for dinner and the second for my husband to slice, saute in olive oil and eat tomorrow. He loves it that way.

Tonight, after baking at 425 degrees for an hour, I cut the potato in half and "dressed" each half this way. I dusted each with cinnamon, grated a raw apple over each and then drizzled maple syrup on each.

This is delicious.

For a second course, I took some leftover pinto beans, added minced garlic, a diced organic tomato and ate that. My husband had BBQ beans also with the garlic and tomato.

As I type this, I am full and happy. Try it.
