Dinner for Two

Okay, you asked for it. Quick and great dinner for 2 in less than 20 minutes.

I own a noodle maker, not the kind that makes dough pasta, but the kind that turns vegetables into noodles. It's a spiroli and you can get it on Amazon sometimes for less than $30.00.

I took 2 organic zucchini, fresh from the organic coop we belong to. Put the zucchini on the prongs on one end and insert the other into the round sharp shape on the other. Turn the crank and in a minute you have long, fabulous noodles, all vegetable, no cooking involved.

My  husband wanted Alfredo sauce, so I mixed one cup of Veganaise and 1/2 cup of nutritional yeast flakes with 1/4 cup of water. Heat almost to bubbling and remove from the heat.

I wanted tomato sauce, so I heated some tomato paste, added water, chopped onion, garlic and celery with a shake of dried basil and heated for about 2 minutes.

I toasted 2 pieces of Ezekiel bread, one apiece. He put apple butter on his (with pasta??) and I put some of his Alfredo sauce on mine.

We thought we were so cool, eating this meal at home. It looked so good and was delicious.

    For the Alfredo:
    you can use any raw white nut: almonds, cashews, macadamia or pine with the yeast an bit of olive oil and water and salt. Blend to sauce consistency.

    The Red Sauce: Keep soaked sun-dried tomatoes in the frig and put a handful in the blender with your fav Italian spices, oil and touch of natural sweetener and water and the secret ingredient....fennel seed :)Blend to sauce consistency and then add other veggies. This way it stays all raw!!
